G\u0131da \u00fcretimine dair bilgiler bize, ekosisteme ve sa\u011fl\u0131\u011fa dair maliyetleri de hesaba katarak, g\u0131dan\u0131n ger\u00e7ek maliyetleri hakk\u0131nda daha fazla \u015fey \u00f6\u011frenmemiz gerekti\u011fini hat\u0131rlat\u0131yor.<\/p>\n<p>Bu maliyetlerin fark\u0131nda olan ki\u015fi, kurulu\u015f ve topluluklar g\u0131da \u00fcretimi, da\u011f\u0131t\u0131m\u0131 ve t\u00fcketiminde ekolojik, adil, yerel ve kat\u0131l\u0131mc\u0131 sistemler olu\u015fturarak, s\u00f6z konusu \u00e7evresel ve sosyal maliyetleri azaltabilecek \u00f6rnekler olu\u015fturuyor.<\/p>\n<p>Asit ya\u011fmurlar\u0131ndan, zirai ila\u00e7lardan, kurakl\u0131ktan, selden, hastal\u0131klardan, zamans\u0131z esen r\u00fczg\u00e2rdan, a\u011f\u0131r metallerden, kirlenmi\u015f toprak ve sudan, molek\u00fcllerini ay\u0131r\u0131p yeniden birle\u015ftiren makinalardan, bir s\u00fcr\u00fc katk\u0131 maddesi aras\u0131ndan s\u0131yr\u0131l\u0131p kilometrelerce uzaklardan ta\u015f\u0131narak sofralar\u0131m\u0131za gelen yiyecekler, ger\u00e7ekten \u201cg\u0131da\u201d m\u0131d\u0131r? G\u0131dan\u0131n \u00f6n\u00fcndeki \u201cger\u00e7ek\u201d tan\u0131m\u0131na neden ihtiya\u00e7 duyuyoruz? Baz\u0131 g\u0131dalar ger\u00e7ek olmad\u0131\u011f\u0131 i\u00e7in mi? O zaman g\u0131da nedir? G\u0131da, TDK s\u00f6zl\u00fc\u011f\u00fcnde, \u201cBesin; yenilebilir, beslenmeye elveri\u015fli her t\u00fcr madde; ya\u015famak, varl\u0131\u011f\u0131n\u0131 s\u00fcrd\u00fcrmek i\u00e7in gerekli \u015fey\u201d olarak tan\u0131mlan\u0131yor. G\u0131dan\u0131n kirlenmeden, bozulmadan, besleyici de\u011ferini kaybetmeden bize ula\u015fmas\u0131 nas\u0131l m\u00fcmk\u00fcn olabilir?<\/p>\n<p>Bu ve bunun gibi sorular\u0131n yan\u0131tlar\u0131 g\u0131da g\u00fcvenli\u011finin alan\u0131na giriyor. G\u0131da g\u00fcvenli\u011fi, ama\u00e7lar\u0131 do\u011frultusunda \u00fcretildi\u011finde veya t\u00fcketildi\u011finde g\u0131dan\u0131n t\u00fcketiciye zarar vermeyece\u011fi durumu\/s\u00fcreci ifade ediyor. Beslenmeye elveri\u015fli bitkilerin ya da hayvansal \u00fcr\u00fcnlerin bozulmadan sofraya geli\u015fi g\u00fcvence alt\u0131na al\u0131nd\u0131\u011f\u0131nda g\u0131da g\u00fcvenli\u011fi sa\u011flanm\u0131\u015f oluyor. Bu a\u00e7\u0131dan bakt\u0131\u011f\u0131m\u0131zda tezg\u00e2hlarda bize sunulan \u00fcr\u00fcnlerin ne kadar\u0131n\u0131n g\u0131da olup olmad\u0131\u011f\u0131n\u0131 bilmek, tarladan sofraya b\u00fct\u00fcn \u00fcretim s\u00fcre\u00e7lerinin izlenmesiyle m\u00fcmk\u00fcn. \u00c7ift\u00e7iden arac\u0131ya, g\u0131da i\u015fleyen fabrikan\u0131n y\u00f6netici ve \u00e7al\u0131\u015fanlar\u0131ndan g\u0131da ambalaj\u0131 \u00fcreticisine ve son al\u0131c\u0131ya kadar, bu s\u00fcre\u00e7te yer alan her ki\u015fi ve kurum g\u0131dan\u0131n g\u00fcvenli\u011finden sorumlu. G\u0131da g\u00fcvenli\u011finin sa\u011flanmas\u0131 i\u00e7in, g\u0131dalarda olabilecek fiziksel, kimyasal, biyolojik her t\u00fcrl\u00fc zarar\u0131n bertaraf edilmesi gerekiyor. Ancak, g\u0131dan\u0131n kilometrelerce mesafe kat ederek taba\u011f\u0131m\u0131za ula\u015ft\u0131\u011f\u0131 g\u00fcn\u00fcm\u00fczde bu tedbirlerin al\u0131nmas\u0131 yeterli de\u011fil. G\u0131da g\u00fcvenli\u011finin sa\u011flanmas\u0131n\u0131n yan\u0131 s\u0131ra istikrarl\u0131 eri\u015fiminin de garanti alt\u0131na al\u0131nmas\u0131 gerekiyor. K\u00fcresel G\u0131da G\u00fcvenli\u011fi Endeksi\u2019ne g\u00f6re, g\u0131da g\u00fcvenli\u011finin sa\u011flanmas\u0131 i\u00e7in d\u00f6rt unsurun yerine gelmesi gerek: Bulunabilirlik, eri\u015febilirlik, kalite\/g\u00fcvenilirlik ve istikrar. Endeks\u2019e g\u00f6re, g\u0131da g\u00fcvenli\u011fini en iyi sa\u011flayan \u00fclke ABD. Onu \u0130rlanda ve Singapur izliyor. T\u00fcrkiye ise 113 \u00fclke aras\u0131nda 45\u2019nci s\u0131rada yer al\u0131yor.<\/p>\n<p><strong>9 ki\u015fiden biri a\u00e7l\u0131k \u00e7ekiyor, 3 ki\u015fiden biri sa\u011fl\u0131kl\u0131 beslenemiyor<\/strong><\/p>\n<p>Yeterli ve g\u00fcvenli g\u0131daya eri\u015fim en temel insan haklar\u0131ndan biri. Ancak Birle\u015fmi\u015f Milletler G\u0131da ve Tar\u0131m \u00d6rg\u00fct\u00fc FAO\u2019nun verileri, g\u00fcn\u00fcm\u00fczde yakla\u015f\u0131k 800 milyon insan\u0131n a\u00e7 oldu\u011funu, yani g\u0131daya eri\u015femedi\u011fini ortaya koyuyor. D\u00fcnyada her 9 ki\u015fiden biri a\u00e7l\u0131k \u00e7ekerken, yetersiz beslenen her 5 ki\u015fiden biri iyi y\u00f6netilemeyen, \u00f6l\u00fcm ve hastal\u0131klara her an a\u00e7\u0131k, kriz ortamlar\u0131nda ya\u015f\u0131yor.<\/p>\n<p>Ancak s\u00f6z konusu ara\u015ft\u0131rma sadece g\u0131daya eri\u015fim de\u011fil, \u201cg\u00fcvenli\u011fi sa\u011flanm\u0131\u015f g\u0131daya eri\u015fim\u201d dikkate al\u0131narak yap\u0131lsayd\u0131 yetersiz beslenenlerin say\u0131s\u0131 \u00e7ok daha artard\u0131. 2016 K\u00fcresel Beslenme Raporu\u2019na g\u00f6re, d\u00fcnyada her \u00fc\u00e7 ki\u015fiden biri yeterli ve sa\u011fl\u0131kl\u0131 beslenemiyor. Yani yedikleri beslenmeye elveri\u015fli de\u011fil.<\/p>\n<p>\u00d6rne\u011fin ABD, g\u00fcn\u00fcm\u00fczde g\u0131daya eri\u015fimin en y\u00fcksek d\u00fczeyde oldu\u011fu \u00fclkeler aras\u0131nda yer al\u0131yor ama yetersiz beslenmeyi tetikleyen obezite \u00fclkenin en \u00f6nemli sorunlar\u0131 aras\u0131nda&#8230; Bunun en \u00f6nemli nedenlerinden biri, katk\u0131 maddeleri ile \u015feker, ya\u011f ve karbonhidrat y\u00fckl\u00fc i\u015flenmi\u015f \u00fcr\u00fcnler. Raflardaki \u00fcr\u00fcnlerin tam anlam\u0131yla \u201cg\u0131da\u201d olup olmad\u0131\u011f\u0131 nedense pek sorgulanm\u0131yor. K\u00fcresel Beslenme Raporu da ayn\u0131 soruna dikkat \u00e7ekiyor: \u201cY\u00fcz milyonlarca ki\u015fi yetersiz beslendikleri i\u00e7in a\u015f\u0131r\u0131 kilolu; kanlar\u0131nda da \u00e7ok fazla \u015feker, tuz ve kolestrol var.\u201d S\u00f6z konusu yetersiz beslenme sorunlar\u0131 ise tamamen g\u0131da g\u00fcvenli\u011finin sa\u011flanamamas\u0131ndan kaynaklan\u0131yor.<\/p>\n<p><strong>G\u0131da g\u00fcvenli\u011fine y\u00f6nelik tehditler<\/strong><\/p>\n<p>Yeditepe \u00dcniversitesi G\u0131da M\u00fchendisli\u011fi B\u00f6l\u00fcm\u00fc \u00f6\u011fretim \u00fcyesi Prof. Dr. Artemis Karaali\u2019nin \u201cG\u0131da Sekt\u00f6r\u00fcnde S\u00fcrd\u00fcr\u00fclebilirlik\u201d konulu ara\u015ft\u0131rmas\u0131na g\u00f6re g\u0131dan\u0131n s\u00fcrd\u00fcr\u00fclebilirli\u011fini engelleyen unsurlar, ayn\u0131 zamanda g\u0131da g\u00fcvenli\u011fini de tehdit ediyor:<\/p>\n<p>\u201cTar\u0131mda a\u015f\u0131r\u0131 kimyasal kullan\u0131l\u0131yor, do\u011fa sadece insan ihtiya\u00e7lar\u0131 i\u00e7in s\u00f6m\u00fcr\u00fcl\u00fcyor, uzun s\u00fcre dayanmas\u0131 i\u00e7in g\u0131da katk\u0131 maddeleri kullan\u0131l\u0131yor, yiyecek ambalajlar\u0131 \u00e7\u00f6pe d\u00f6n\u00fc\u015f\u00fcyor, k\u0131talarararas\u0131 g\u0131da ula\u015f\u0131m\u0131 i\u00e7in petrol harcan\u0131yor, g\u0131dalar yolda telef oluyor, arac\u0131lar ve uzakl\u0131klar nedeniyle \u00fcr\u00fcn maliyetinin kat be kat \u00fczerinde sat\u0131lan \u00fcr\u00fcnler t\u00fcketicinin ekonomik g\u00fcc\u00fc yeterse al\u0131n\u0131yor, sa\u011fl\u0131ks\u0131z g\u0131dalar uzun s\u00fcre bekletme ve hatal\u0131 pi\u015firme y\u00f6ntemleri nedeniyle israf edilerek t\u00fcketiliyor.\u201d<\/p>\n<p>Bu sorunlara ayr\u0131ca arac\u0131lar nedeniyle t\u00fcketicinin \u00f6dedi\u011fi paran\u0131n \u00e7ift\u00e7iye gelir olarak yans\u0131m\u0131yor olu\u015fu, GDO\u2019lar, g\u0131da ula\u015f\u0131m\u0131 kaynakl\u0131 sera gaz\u0131 sal\u0131m\u0131, iklim de\u011fi\u015fikli\u011fi kaynakl\u0131 kurakl\u0131k ve sellerin yol a\u00e7t\u0131\u011f\u0131 zarar\u0131 da eklersek g\u0131da g\u00fcvenli\u011fi \u00fczerindeki tehditler tablosunun ne denli kalabal\u0131k oldu\u011fu ortaya \u00e7\u0131kar. D\u00fcnya genelinde y\u0131lda 3,5 milyon tondan fazla pestisit kullan\u0131l\u0131yor. \u00d6yle ki, masum ve sa\u011fl\u0131kl\u0131 bilinen elmaya bile, sofram\u0131za gelene kadar 11 kez zehir at\u0131l\u0131yor. Bu kimyasallar artt\u0131k\u00e7a ortaya \u00e7\u0131kard\u0131klar\u0131 sa\u011fl\u0131k ve \u00e7evre riskleri de art\u0131yor. \u00d6rne\u011fin, D\u00fcnya Sa\u011fl\u0131k \u00d6rg\u00fct\u00fc taraf\u0131ndan \u201cson derece tehlikeli\u201d, \u201cy\u00fcksek seviyede tehlikeli\u201d ve \u201cmuhtemel kanserojen\u201d olarak belirlenen 9 etken madde T\u00fcrkiye tar\u0131m\u0131nda hala kullan\u0131l\u0131yor.<\/p>\n<p>Hacettepe \u00dcniversitesi G\u0131da M\u00fchendisli\u011fi B\u00f6l\u00fcm\u00fc \u00f6\u011fretim \u00fcyeleri Prof. Dr. \u00dcmran Uygun ile Prof. Dr. Hamit K\u00f6ksel, \u201cG\u0131da G\u00fcvenli\u011fini Tehdit Eden Kimyasallar\u201d ba\u015fl\u0131kl\u0131 \u00e7al\u0131\u015fmada, bu kimyasallardan baz\u0131lar\u0131n\u0131 \u015f\u00f6yle s\u0131ral\u0131yorlar: Bitki koruma \u00fcr\u00fcnlerinin kal\u0131nt\u0131lar\u0131, do\u011fal toksik maddeler (mikotoksinler, bitki toksinleri vb.), i\u015fleme s\u0131ras\u0131nda olu\u015fan toksinler (akrilamid, heterosiklik aromatik aminler, furanlar vb.), g\u0131da alerjenleri, a\u011f\u0131r metaller (kur\u015fun, arsenik, c\u0131va, kadmiyum vb.), end\u00fcstriyel kimyasallar (dioksinler, benzen, perklorat vb.), ambalaj materyallerinden ge\u00e7en maddeler ve hile ama\u00e7l\u0131 kat\u0131lan maddeler (melamin vb.).<\/p>\n<p>B\u00fct\u00fcn bu kimyasal bombard\u0131man\u0131nda g\u0131da g\u00fcvenli\u011fini sa\u011flamak olduk\u00e7a zor&#8230; \u00d6rne\u011fin tar\u0131mda kullan\u0131lan pestisitler ile suni g\u00fcbreler, topra\u011f\u0131n fakirle\u015fmesine ve su varl\u0131\u011f\u0131n\u0131n kirlenmesine yol a\u00e7abildi\u011fi gibi, soludu\u011fumuz havay\u0131 da kirletiyor; dolay\u0131s\u0131yla sadece g\u0131dalardan de\u011fil, havadan da zehirlenme riski yarat\u0131yor. Ege \u00dcniversitesi Ziraat Fak\u00fcltesi emekli \u00f6\u011fretim \u00fcyesi Prof. Dr. Nafiz Delen, y\u00fcksek buharla\u015fabilme yetene\u011fine sahip pestisitlerin, uyguland\u0131ktan sonra y\u00fczde 80-90 oran\u0131nda buharla\u015farak havaya kar\u0131\u015fabildi\u011fini s\u00f6yl\u00fcyor ve ekliyor: <em>\u201cBu durum, soludu\u011fumuz havan\u0131n yo\u011fun bi\u00e7imde kirlenmesine yol a\u00e7abildi\u011fi gibi, hastal\u0131klarla, zararl\u0131larla ya da yabanc\u0131 otlarla kimyasal sava\u015f\u0131mda etki d\u00fc\u015f\u00fckl\u00fc\u011f\u00fcne neden olabilir. \u00d6rne\u011fin, herbisit karakterdeki trifluralin, topra\u011f\u0131n 7,5 cm derinli\u011fine kar\u0131\u015ft\u0131r\u0131lm\u0131\u015f olsa bile, 90 g\u00fcn s\u00fcreyle, uygulanan miktar\u0131n\u00a0 y\u00fczde 3,4\u2019l\u00fck b\u00f6l\u00fcm\u00fc havaya kar\u0131\u015fmaya devam eder. Havaya kar\u0131\u015fan pestisitler ya\u011fmurla yery\u00fcz\u00fcne d\u00f6nerek topra\u011f\u0131, suyu hatta tar\u0131m \u00fcr\u00fcnlerini kirletebilir.\u201d<\/em> Delen, havan\u0131n pestisitler de dahil olmak \u00fczere, kimyasal maddelerle kirlenmesinin insanlarda, \u00f6zellikle de \u00e7ocuklarda solunum, kalp-damar, kan, sinir, \u00fcreme ve imm\u00fcnolojik hastal\u0131klar ve endokrin sistemi bozukluklar\u0131, hatta akci\u011fer kanserleri gibi sa\u011fl\u0131k sorunlar\u0131na yol a\u00e7abilece\u011fini s\u00f6yl\u00fcyor.<\/p>\n<p>Uyguland\u0131\u011f\u0131nda sadece %2\u2019si hedef organizmaya giden , geri kalan %98\u2019i ise havaya, suya ve topra\u011fa kar\u0131\u015fan pestisitler, ayn\u0131 zamanda bitkilerin tozla\u015fabilmesi i\u00e7in ihtiya\u00e7 duydu\u011fumuz ar\u0131, b\u00f6cek ve ku\u015flar\u0131n azalmas\u0131na da neden oluyor ve g\u0131dan\u0131n s\u00fcrd\u00fcr\u00fclebilirli\u011fini tehdit ediyor.<\/p>\n<p><strong>Do\u011fadan uzakla\u015ft\u0131k\u00e7a katk\u0131 maddeleri art\u0131yor<\/strong><\/p>\n<p>G\u0131da g\u00fcvenli\u011fi konusunda en \u00f6nemli sorunlardan biri de g\u0131dalar\u0131n i\u015flenmesi s\u0131ras\u0131nda uygulanan y\u00f6ntemler ve katk\u0131 maddeleri.<\/p>\n<p>Katk\u0131 maddeleri hayat\u0131m\u0131za o kadar h\u0131zl\u0131 girdi ki, bunlar\u0131n ger\u00e7ek mi yoksa suni mi oldu\u011funu sorgulama ihtiyac\u0131 bile duymad\u0131k. Eskiden ne s\u00fctteki antibiyotik sorgulan\u0131rd\u0131, ne de tavuktaki hormon. Sebzeler, meyvelerde kal\u0131nt\u0131 diye bir \u015fey yoktu. Kimse yedi\u011fi \u00f6\u011f\u00fcnlerin besleyici de\u011ferini sorgulamazd\u0131, \u00e7\u00fcnk\u00fc onlar ger\u00e7ekten g\u0131dayd\u0131.<\/p>\n<p>G\u0131dadan ve onu yeti\u015ftiren \u00e7ift\u00e7iden, \u00fcreticiden o kadar uzakla\u015ft\u0131k ki, taba\u011f\u0131m\u0131za gelene kadar ge\u00e7en s\u00fcrede bozulmas\u0131n\u0131 \u00f6nlemek i\u00e7in m\u00fchendislerin laboratuvarlarda \u00fcretti\u011fi katk\u0131 maddelerine ihtiya\u00e7 duyuyoruz. Tur\u015fu kurmadan kurutmaya, tarhanadan konserveye kadar geleneksel saklama ve koruma y\u00f6ntemlerini ise \u00e7o\u011fumuz ya bilmiyoruz ya da koca bir end\u00fcstriye teslim etmi\u015f durumday\u0131z.<\/p>\n<p>G\u0131da ad\u0131 alt\u0131nda raflar\u0131 kaplayan \u00fcr\u00fcnlerin i\u00e7inde raf \u00f6mr\u00fc uzas\u0131n, k\u0131vam\u0131 yerinde olsun ya da g\u00fczel g\u00f6r\u00fcns\u00fcn diye, tan\u0131mad\u0131\u011f\u0131m\u0131z pek \u00e7ok kimyasal ve katk\u0131 maddesi var: Tatland\u0131r\u0131c\u0131lar, lezzet art\u0131c\u0131lar, k\u0131vam art\u0131r\u0131c\u0131lar, renklendiriciler, koruyucular, asit oran\u0131 d\u00fczenleyenler, topaklanmay\u0131 \u00f6nleyenler ve daha pek \u00e7ok laboratuvar \u00fcr\u00fcn\u00fc&#8230; \u00d6rne\u011fin, i\u015flenmi\u015f veya y\u00fcksek glisemik indeksli g\u0131dalarda bulunan ni\u015fastal\u0131 karbonhidratlar, y\u00fcksek \u015feker i\u00e7erikleri nedeniyle a\u015f\u0131r\u0131 ins\u00fclin salg\u0131lanmas\u0131n\u0131 uyar\u0131yor ve bu da hipoglisemi dedi\u011fimiz kan \u015fekeri d\u00fc\u015f\u00fckl\u00fc\u011f\u00fcne neden oluyor. Blue 1, Red 40, Yellow 6 g\u0131da boyalar\u0131n\u0131n baz\u0131 bireylerde alerjiye neden oldu\u011fu bildiriliyor.
